Tonkotsu Kakuni Ramen

The service was quick and polite.  The egg was perfectly done.  The pork belly was tender and juicy.  The ramen was fresh and springy.  The broth was initially amazing.  Then ... I don't know what happened.  I suddenly detected something ... different ... in the bouquet of the broth.  Perhaps I was mistaken.  Has anyone else encountered this?
